Carrotcake – A Free Recipe
Carrots are high in Vitamin A, potassium rich, calcium, iron, niacin, sodium, B6.
The antioxidants protect the body against pollutants and free radicals, hence help to fight cancer and build up your immune system, eat some carrotcake.
Recipe:
NUTTY CARROTCAKE
7oz self-raising flour.
3 tsp mixed sweet spices.
1tsp (bicarbonate soda)
4oz soft brown sugar
2oz desiccated coconut
2oz broken walnuts
4oz butter
4oz sultanas
6oz grated carrot
Grated rind of an orange
2 beaten eggs.

Mix the first six ingredients.
Gentle melt the butter, add the sultanas, carrots, and orange. Combine with the dry ingredients, add the beaten eggs and mix thoroughly.

Turn into a lined loaf tin and bake for 50 to 60. minutes, or until a knife inserted into the centre comes out clean.
